If Tiger Rock was inspired by our travels, Bistro Lao is born from home. Rooted in the meals Vikki grew up with, this concept brings together family recipes, tradition, and Wai's culinary expertise to create something truly special.
Lao cuisine is deeply influenced by both geography and history. Having been colonised by France in the late 1800s — along with Cambodia and Vietnam to form French Indochina — Laos developed a unique blend of bold Southeast Asian flavours and subtle French touches.
Much of the menu is inspired by Vikki's mother, who came from Isaan in Northeast Thailand before settling in Laos. Isaan and Lao cuisines are closely linked, sharing a love for intense, vibrant flavours drawn from fresh herbs, fermented fish (pa daek), shrimp paste, and of course, chilli.
Staples of every meal include:
- Sticky Rice (Khao Niao)
- Spicy Dips (Jeaw)
- Grilled Fish or Chicken (Pa Beeng, Gai Yang)
- Zesty Salads (Tam Mak Hoong, Larb)
- Hearty Soups (Tom Saep, Orm)
At Bistro Lao, every dish tells a story — of resilience, tradition, and the enduring power of food to bring people together.
